Cream WafersYield 2 Dozens
Wafers 1 cup - unsalted butter 1/3 cup - heavy whipping cream 2 cups - all purpose flour 1 cup - granulated sugar
Buttercream Filling ¼ cup - unsalted butter ¾ cup - powdered sugar 1 teaspoon - pure vanilla extract food color of choice
Combine butter, sugar and vanilla in an electric mixer with paddle attachment until smooth and whipped. Add food coloring of your choice and set aside.
Chef’s Notes Preheat oven to 375 degrees. In electric mixer combine butter and flour until blended, add cream and mix until smooth and consistent. Wrap in plastic and chill for one hour. Roll dough out to 1/16" thick and cut out 2" circles. Place in granulated sugar to coat, lay out on cookie sheet, dock with a fork and bake for 7-9 minutes until flaky but not browned. Fill with butter cream frosting and share with friends and family!
